Gibb chased his own kicked and stretched over for the opening score, before Josh Jelfs drove over from close range.
Oxford led 17-3 at half-time, thanks to a second try from Gibb.
The winger completed his hat-trick, when he hacked forward and outpaced the defence to touch down.
Oxford lost two players to the sin-bin, but they extended their lead, thanks to two more tries from Gibb.
